This Saison is brewed to commemorate our one-year anniversary or as the Dutch would say "Jubileum." It is a celebration of everything we have done in this short period of time, as well as the wealth of goods that the state of New Jersey has to offer. To brew this beer, we used floor malted grains from our friends at Rabbit Hill Farms in Shiloh, NJ and yeast from our friend at East Coast Yeast Labs in Hillsborough, NJ. After primary fermentation, we aged the beer in red wine barrels from our friends, just down the road, at Unionville Vineyards in Ringoes, NJ. It was then re-fermented on peaches. Cheers!
